1 teacup Selva Ditalini Pasta
1 teacup boiled kidney beans (or regular beans)
1 diced onion
1 diced potato
1 diced carrot
3–4 tbsp olive oil
1 tsp tomato paste
6 cups chicken broth or water
Salt, black pepper, thyme
Sauté the onion and tomato paste in olive oil for 2–3 minutes, then add the carrots and potatoes and continue sautéing. Add chicken broth or water, salt, and black pepper to the pot and bring to a boil. Add Selva Ditalini Pasta and boiled kidney beans and cook until the pasta is done, about 5 minutes. Serve with a sprinkle of thyme if desired.
